Malabari Paratha Chicken Ghee roast

Malabari Paratha Chicken Ghee roast

Ingredient Quantity
Chicken cut into cube size (Boneless) 200 gm
Ghee 3-4 tbsp
Dried red chilies 4-5 no.
Coriander seeds 1 tbsp
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Cinnamon stick ½ inch
Black peppercorns 1 tsp
Cloves 3-4 no.
Lemon juice 1 no.
Ginger chopped 1 inch
Garlic chopped 4-5 no.
Curry leaves 16-18 no.
Onion slice 1 no.
Turmeric powder ¼ teaspoon
Salt to taste
Yogurt ¼ cup
Jaggery grated 1 tsp
Tamarind pulp 1 tbsp
Lettuce for serving
Malabari paratha 2 no.

Method:
1. Heat a pan and Dry-roast red chilies, coriander seeds, cumin
seeds, fennel seeds, cinnamon stick, black peppercorn and
cloves till fragrant. Transfer into a grinder; add lemon juice,
ginger, garlic, 5-6 no. of curry leaves and ½ cup of water and
grind to a fine paste.

2. Mix the chicken with prepared paste, add some salt and turmeric
powder, mix well and keep it aside for 1 hour.

3. Heat ghee in a pan, add remaining curry leaves and onion, mix
well and sauté for 1 min.

4. Add marinated chicken, mix well and cook for 12-15 Min.

5. Add yogurt, jaggery, and tamarind pulp, mix well and cook till
mixture is dry.

6. Meanwhile heat paratha in a pan from both sides.

7. Place lettuce leaves on paratha, put prepared chicken on top of
lettuce and fold the paratha into half and serve hot.
