Cooking without a recipe is a very freeing experience, you’re in total control and your instincts and taste buds get to take over and you get to create a dish suited specifically to you. We learned early on the kitchen of the happy pear that we would get similar results by using different ingredients as long as we followed certain ratios and patterns. This is a very useful skill when you’re dealing with fresh ingredients in an ever changing environment.
